When making this decision it is best to think about how many files you
are talking about.  A server with hundreds of sites, with twice that
many log files open (access_log, error_log), could run into problems of
memory, openfiles limit, etc.

It has been my opinion to tune the log files based on the number of
sites.
<10 Separate access and error logs per site
>10 Separate access logs, but a single unified error_log
>200 Single access log, or find a way to group them into fewer log
files.
