Craig,
I run Ubuntu on my laptop which I use every day. It's a great distro
and has a great community. I use it on a production server and it has
worked out great for me.
The next version comes out in a couple of days on the 18th.
Ubuntu is pretty secure. If you want a firewall, you have to install
one yourself using apt-get or Synaptic.
As far as extensibility there are thousands of apps in the apt repositories.
Again, the community is great. #ubuntu-utah on irc.freenode.net is a
great resource. Lots of local Ubuntu users in there.
I'd recommend giving Ubuntu a try.
