As little as 128MB of RAM is more than enough, depending on the complexity of 
your application.  Obviously, if your DB is large and the queries are 
memory-intensive, more RAM could help, even if there is little volume.  On 
the other hand, even if you have a larger volume of traffic, well designed 
apps with minimal overhead will run beautifully, too.

It's always a balancing act.
