One thing that has worked for me.
I have an mp3 player that has a voice record capability. It fits nicely in my shirt pocket (When I actually wear a shirt with a pocket.) and tends to have a consistent volume and reasonable quality.

Of course, I won't be to the meeting, (Cache Valley) but more than likely someone that comes to the meetings would have one. (or a better solution altogether.)
