I've only used Bugzilla and Trac, so I can't comment on all of them, but 
I can't say enough about Trac.  It's simple, its very easy to setup and 
administrate, and I love it. :)

Bugzilla is kind of hard to get used to, and can get really slow if you 
put a LOT of stuff in there, but I like it, too.
